  • 1 cup yellow corn meal
  • 1 cup flour
  • 4 tsp baking powder
  • 1 tsp Instead of Eggs
  • 1/4 cup margarine
  • 1/4 cup sugar
  • (rice, soy, almond, or oat)
  • 1 cup milk substitute
  • 1/2 tsp salt

Instructions:

Mix dry ingredients thoroughly. Add milk substitute and margarine. Beat about one minute. If too dry, add a 1/4 cup apple sauce to reach proper consistency.

Bake in 8-inch pan at 425 degrees F for 25 minutes or in muffin tins for 17-20 minutes. Done when a toothpick inserted in the center comes out clean.

Preheat oven to 375 degrees. Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper. Bake until cookies are golden around the edges, 8 to 10 minutes. Remove from oven, and cool on baking sheet 1 to 2 minutes.
